Egg free and milk free strawberry muffins

As promised I'm sharing with you now the recipe we have been doing this last two weeks and that has been a hit a school. The Strawberry Love Muffins (egg and milk free)
Ingredients
  • 1½ cups all-purpose flour or white-wheat flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup oat drink (havredryck*)
  • ⅓ cup canola, grapeseed or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup frozen strawberries, thawed and sliced
Instructions
  1. Preheat your oven to 375°F (190°C) and grease one dozen muffin tins.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Gently stir in the milk beverage, oil, and vanilla but be careful not to over mix, a few lumps are okay. Fold in the thawed strawberries.
  3. Divide the batter between your prepared muffin tins, filling them about ¾ of the way to the top.
  4. Slide your filled tins into the oven and bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  5. Let the muffins sit for 10 minutes, then remove them from the tins to a cooling rack. Enjoy with someone you love.
