Baking Club

 On jullov we had an impromptu baking club using pineapple! Bakers made upside down pineapple cake!

We adapted this recipe from king arthur flour and made them smaller by using a cupcake tin!
For this recipe, one will need two bowls, one for the topping and one for the batter.


Topping:

  • Pineapple from a can,
  • 1/2 cup brown sugar,
  • 1/4 cup butter,
  • 1 gram cinnamon
  • 1 gram ground ginger


Cake batter:

  • 45 grams butter
  • 3/4 cup sugar
  • 1 large egg
  • Pinch of salt
  • 5 grams baking powder
  • 1 teaspoon vanilla powder
  • 1 1/3 cup flour
  • 1/2 cup milk

Instructions:

  • Preheat the oven to 180 degrees Celcius.
  • For the topping, melt butter in the microwave and mix in the brown sugar, cinnamon, and ginger.
  • For the cake batter, mix the butter and sugar until creamy. Add in the egg, salt, baking powder, and vanilla. Then add the flour in parts and the milk in two parts until everything is mixed.
  • Spoon in some pineapple into the cupcake tins and then some of the topping. Cover with the cake batter.
  • Put in the oven for 20 minutes and check with a fork if it is cooked through. Take out when cool and flip over so the pineapple is on the top!

Baking Club

During höst lov we baked monster dentures!! We were inspired by The Girl Who Ate Everything Blog with their awesome vampire teeth. We made some adjustments though, such as using mini meringue as teeth instead of marshmallows and as we made monster teeth there was no need for the almond slivers (we also have students with nut allergies).

To recreate our monster teeth, you will need cookies (we baked some earlier that day using this recipe), red food colouring, icing, and mini meringue toppings (often found near the ice cream).

  1. Mix icing with red food colouring until you are happy with the colour.
  2. Cut cookies in half, to be the upper and lower jaws.
  3. Spread icing on both halves of the cookie.
  4. Carefully line up mini meringues along the circular side of one half of the cookie.
  5. Put the other iced cookie half on top of the teeth.
  6. Voila! You have a set of monster dentures!

Baking Club

Last Baking Club celebrated International chocolate muffin day!


To recreate these delicious tiny cakes you will need:

  • 200 g flour
  • 200 g sugar
  • 75g cocoa
  • 16 g baking powder
  • 450 mL milk
  • 35g vegetable oil
  • 5 mL vanilla powder
Then you will need the supervision of an adult to preheat the oven to 160 degrees Celsius
Mix the dry ingredients in a large bowl
In a different bowl beat the milk and oil together
Then add the oil and milk mixture to the large bowl, combining the wet and dry.
Pour the mixture equally into cupcake tins and bake until a toothpick inserted into the middle of a cupcake comes out clean. This should take around 20-30 minutes.

Baking Club

Rådan bakers made sugar free apple pie bites with Swedish apples this past Monday. The recipe we used did actually call for sugar but we forgot to add it and it tasted good without!

Apple Pie Bites
1 apple
1 package pie dough or flakey crust
45 mL butter
20 mL cinnamon
(50 mL sugar, optional)


  1. If butter is cold, melt it in the microwave.
  2. Add in the cinnamon and sugar.
  3. Get an adults help to peel and cut the apple into small pieces.
  4. Unroll the pie dough and cut into circles using a wide mouth cup.
  5. Put a few pieces of apple onto one half of the circle but do not let it touch the edge.
  6. Add a half a teaspoon of the cinnamon and butter.
  7. Fold the circl in half and press the edges together.
  8. Place onto parchment paper on a cookie sheet. 
  9. With a fork poke holes into all of the pie bites.
  10. Bake in the oven for 12-18 minutes at 175C.
  11. Let cool on a wire rack if possible.
  12. Enjoy with vanilla sauce if possible!

Baking in French! Club


Bakers became scientists as they experimented the effects of bicarboante and baking powder on chocolate chip cookies. Each group followed the same recipe except they had one tiny ingredient change; they used baking powder, or bicarbonate, or both!


The results below! Can you tell the difference between these three batches of cookies?



If you want to try this at home, here is the recipe our club used!

Egg Free Cookie Recipe

Ingredients:

  • 125 g butter
  • 125g sugar
  • 15 mL vanilla powder
  • 200g flour
  • 5 mL baking powder
  • And optional but preferred, chocolate chips!
Instructions:
  1. Preheat the oven to 180C.
  2. Mix butter and sugar together until creamy.
  3. Add in everything else. If it becomes hard to mix with a spoon, go ahead and use clean hands!
  4. Roll into balls that are roughly all the same size and spaced apart from each other on the parchment lined tray.
  5. Bake for 10-12 minutes!
  6. After they cool down, bon appetit!

Baking Club in French: Chocolate Zucchini Muffins with Chocolate Chips

An old recipe from baking club last year.


So let's see what we need:
  • 210g farine (flour)
  • 20 g poudre de cacao (coco powder)
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 200g sucre (sugar)
  • 35 g chocolate chips
  • 200 g courgette râpée (grated zucchini)
  • 2 oeufs, beaten (eggs)
  • 84 g huile (oil approximately)
  • 1 teaspoon vanille sucre (vanilla powder)
Les instructions:

In a large bowl, place flour, cocoa powder, salt, baking soda, baking powder, and granulated sugar, and whisk to combine.

  • Add 1 1/2 cups (150 g) of the grated zucchini to the dry ingredients and stir to combine, breaking up any clumps of grated zucchini.
  • Place the remaining 1/2 cup (50 g) grated zucchini, eggs, oil and vanilla, and mix.
  • Create a hole in the center of the bowl of dry ingredients, pour in the wet ingredients and mix to combine. The batter will be soft. Add the chocolate chips.
  • Pour into muffin tin. Bake for 20 minutes.

Mustafa Abdi
My name is Mustafa known as Musse too. I have worked in Rådan since October 2015. I have worked with people almost all the time and experienced different  jobs such as nurse, psychiatric nurse and supervisor for unaccompanied minors. My future plan is to become a teacher or recreation pedagogue.



Liliana Agreda
"Hello my name is Liliana, I am from Peru, I speak Spanish, English, Swedish and Portuguese. I am working at Rådan since February 2016. I really enjoy my time with the students and also learning new experiences with them every day.
I love to dance and sing and at the moment I am the person in charge of the dance club".



Kristina Andersson
Hi! I'm Kristina otherwise known as Kiki. I used to live in an Igloo in Canada with Polar Bears as neighbours but I got tired of the Penguins and moved here to the tropical land of Sweden. I deeply regret not catching a
Tauros before moving here. The sweets here are not as great, but the baking club has helped solve the issue.




Ed Dawson
I'm Ed Dawson, I have been working in fritids at Rådan since 2014. It is the third school I've worked in since moving to Stockholm in 2011. I am currently engaged to Filippa, who is Swedish and studies medicine at Karolinska Institutet. We both enjoy travelling together in our spare time and have recently just come back from a long trip in India and Sri Lanka. I also enjoy writing and recording my own music, drawing, playing pool and watching films.



Mattias Ekstam Ruden
Hi there,
I am Mattias the Fritids eldest with the respectful age of 41 going on 42.
I have socialpedagogisk ledarskap degree and have been at Rådan since 2011. The things I like to do is drawing, Arts and Crafts, sports and playing games.


Elias Hjerpe
My name is Elias. I am 27 years old. I have worked here for about 4 years and I still love it. I am currently also training to become a firefighter and this summer I am marrying the love of my life. I have passion for music and play guitar. I try to pass on my knowledge to our kids at Rådan and be a supporter for their learning.



Narges Mahzoun
My name is Narges and I joined Rådan family in 2014. I have Master’s degrees in Language and Culture in Europe and Health and Society. Back home in Iran, I have worked as pre-school teacher, educational planner with English speciality and editor of an international academic journal.
I am Rådan’s librarian and one of the Fantastic Fritids’ team leaders. I am passionate supporter of culture and creativity and working with kids is a joy to me.




Samuel sjökvist
My name is Samuel and I work as team leader for Fritids. I have worked within Futuraskolan since 2009 and here at Rådan since 2011. Since June, I have been on paternity leave but now I’m back to work again.





Kosma Smiechowski
Known as the "Big Bad Boy" by some, or the "Biggest Kid in School" by others. I came from Australia to Sweden to pursue a dream, which I have far exceeded the goals I had set myself. I do my best to bring a childish imagination and an athlete's self discipline to working with (and hopefully teaching) the kids from a Fritids perspective.



Eric Ward
My name Is Eric Ward from Brooklyn NYC. I have a 4 year degree in child psychology and also college athlete in basketball and american football. I specialize in sports, martial arts, and fitness activities for the children. Always feel free to come to me and ask me anything!

BAKING CLUB: GINGER COOKIES




Christmas and the New year is in the corner and we all are so excited. But we cannot imagine our holidays without Ginger cookies. It's the most delecious tradition before Christmas and we specifed two baking sessions to prepare the dough and to bake the cookies.

Let's see what we need: 

2 1/2 cups brown sugar
3/4 cup light syrup
3/4 cup water
150 g butter or margarine
1 tablespoon ground cinnamon
1 tablespoon ground ginger
1 teaspoon minced cloves
about 6 cups flour (+ extra for dusting, 6 ounces is equivalent to about 360 grams)
1 1/2 teaspoons baking soda

Let's begin: (dough preparation)




Mix brown sugar, syrup and water in a saucepan. Boil the mixture.
Add the butter and let it melt. Add spices.
Leave the mixture to cool (without stirring).
Stir in the flour and baking soda.
Wrap the dough in plastic wrap. Leave it to cool until the next day.

Now it's time to bake!




Preheat the oven to 175 ° C.
On the floured table, knead the dough until smooth.  Bake one sample cookie to see if the dough is firm and holds up. If the cookie  is less cohesive and more crumbly, add a little more flour to the dough.

Roll out the dough thinly and remove cookies with dimensions. Place them on greased baking sheet or parchment paper. 
Bake the cookies in the oven at 175 ° C, 6-8 minutes.
Let the cookies cool on the baking sheet. Keep the cookies in the jar at room temperature or in the freezer.

Baking Club in French: Muffins au chocolat!


Muffins au chocolat!

Our lovely kids were divided into groups of 4 and each group was given the required ingredients. It was so cool to bake and practice the name of ingredients in French!

Take a look what we need for this recipe.

Ingredients: 

175 ml poudre de cacao (Cocoa powder)
5mL levure (Baking powder)
177mL buerre (Butter)
118 mL eau chaude (Hot water)
15 mL vanille poudre (Vanilla powder)
300 mL sucre (Sugar)
2 oeufs (Eggs)
315 mL farine (Flour)
pinch of Sel (Pinch of salt)

1. Set oven to 180 (°C)
2. in a bowl, combine cocoa and baking powder and mix them well.
3. Add in boiling water and mix well.
4. Now it's time to add in melted butter and vanilla powder and we mix again.
5. Add suger and, of course, you know what to do: mix well.
6. Now, Eggs join the other ingredients and we continue mixing.
7. At the end we add in flour and salt and mix all the ingredents very well untill we get a nice batter.







8. Now, it's time to fill the muffin tins with one spoon of batter in each.
Put them in the oven for 25-30 minutes and TA DA!!!! Our delicious Chocolate Muffins (in French: Muffins au chocolat) are ready. 


Try it at home! You will love it and ask your adorable kids if you need any help. They are the best teachers ever!

BAKING CLUB IN FRENCH: BAKING POWDER BISCUITS

Fannie Farmer’s Baking Powder Biscuit


Materials
  • 5 mixing bowls
  • 5 table or butter knives
  • Something to roll dough on (parchment paper)
  • Cooking trays
  • Cookie cutters
  • Timer


Ingredients
  • 2 cups farine (flour) + extra for dusting board
  • 4 teaspoons baking powder
  • 2 tablespoons beurre  (Butter)
  • Pincée sel
  • ¾  cup lait


Method
          

  1. Mix dry ingredients, and sift twice.
  2. Work in butter with tips of fingers
  3. Add milk, but not all! Mix with a knife to get a soft dough.
  4. Place onto a floured board and roll lightly to one-half inch in thickness.
  5. Shape with a cookie-cutter. Place on a buttered pan and bake at 220°C  for 12-15 minutes

Baking Club in Fench: Oatmeal Cookies

Oatmeal Cookies



For these very delicious cookies, we need:



    -3/4 cup (170 grams) unsalted butter, room temperture
    -1 Cup (210 grams) packed light brown sugar
    -1 large egg
    -1 teaspoon vanilla
    -3/4 cup (105 grams) all purpose flour
    -1/2 teaspoon baking soda
    -1/2 teaspoon salt -1/2 teaspoon ground cinnamon
    -2 and 1/2 cups (260 grams) old-fashioned rolled oats
    * Raisins if desired



    Preheat the oven to 190⁰C.

And...
Let's begin:
1. In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in egg one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir in to the creamed mixture. Mix in oats.
2. Roll in to balls, and place 2 inches apart on parchment paper in cookie sheets. Flatten each cookie with a large spoon.
3. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
