BAKING CLUB: GINGER COOKIES




Christmas and the New year is in the corner and we all are so excited. But we cannot imagine our holidays without Ginger cookies. It's the most delecious tradition before Christmas and we specifed two baking sessions to prepare the dough and to bake the cookies.

Let's see what we need: 

2 1/2 cups brown sugar
3/4 cup light syrup
3/4 cup water
150 g butter or margarine
1 tablespoon ground cinnamon
1 tablespoon ground ginger
1 teaspoon minced cloves
about 6 cups flour (+ extra for dusting, 6 ounces is equivalent to about 360 grams)
1 1/2 teaspoons baking soda

Let's begin: (dough preparation)




Mix brown sugar, syrup and water in a saucepan. Boil the mixture.
Add the butter and let it melt. Add spices.
Leave the mixture to cool (without stirring).
Stir in the flour and baking soda.
Wrap the dough in plastic wrap. Leave it to cool until the next day.

Now it's time to bake!




Preheat the oven to 175 ° C.
On the floured table, knead the dough until smooth.  Bake one sample cookie to see if the dough is firm and holds up. If the cookie  is less cohesive and more crumbly, add a little more flour to the dough.

Roll out the dough thinly and remove cookies with dimensions. Place them on greased baking sheet or parchment paper. 
Bake the cookies in the oven at 175 ° C, 6-8 minutes.
Let the cookies cool on the baking sheet. Keep the cookies in the jar at room temperature or in the freezer.
