ANZAC cookies in the Baking Club

You are probably asking yourself now...Anzac...what??? ;-)

Yes, ANZAC Day, the 25th of April, is one of Australia's most important national occasions. It is a day of national remembrance for soldiers who fought for Australia and as part of the Australian and New Zealand Army Corp. 
ANZAC biscuits are one of the major symbols of fundraising for the Australian Military and Veterans. The story goes that wives of soldiers fighting in WWI used to send these biscuits to their husbands to help raise spirits, as these biscuits do not spoil easily.

ANZAC biscuits have become a favourite treat for Aussie children. So why not baking them here? ;-) And why baking them now and not in April? Because we are flying to Australia this afternoon! Our flight attendants needed some traditional Aussie cookies to serve during the flight and the baking club of course helped with that!! :-)

Recipe


Ingredients
2 cups rolled oats
2 cups flour
2 cups coconut
1 1/2 cups sugar
250g butter
4 tbsp golden syrup
1 tsp baking soda

2 tblsp boiling water

Turn oven to 160°C. Lightly grease oven trays.Place oats, flour, coconut, sugar in big mixing bowl. Melt butter and golden syrup in saucepan. Take off heat.
Mix baking soda and boiling water in a cup. Add to melted butter mixture in the pan. Quickly add to big mixing bowl. Mix well.
Roll tablespoonfuls of the mixture into balls. Place on trays 5cm apart. Press lightly with fork. Bake for 20 minutes.
